Highland flour is made from a carefully selected variety of wheat from the volcanic uplands of the Malwa plateau. The soil in the Malwa region is rich in potash, therefore cultivation of TWF’s Highland wheat requires minimal fertilizer use.
This specific variety of wheat has the apt mix of essential proteins and starch which yields soft rotis while maintaining a sweet, aromatic flavor profile.
